Maple Granola

Ingredients

Dry:

3 cups rolled oats

2 cups shredded coconut

1 cup raw recans or almonds, chopped

Optional flaxseed, chia seeds,
dried fruit*, etc.


Wet:

2 tbsp molasses

1/2 cup maple syrup

1/4 cup oil

1 tsp vanilla


Directions

Preheat oven to 250 F

  1. In a large bowl, combine dry ingredients and mix well

  2. Add wet ingredients and mix again, ensuring all dry ingredients are evenly coated

  3. On a raised-edge cookie sheet, spead granola mixture in an even later and pat flat

  4. Bake for one hour, stirring mixture every 15

  5. Spread granola over parchment paper to cool and store in an air-tight container

* if adding dried fruit, add at the last 15 minute interval to avoid the fruit becoming too dried and hard
