At Davis Family Sugar Shack, a small family-owned operation near Wausau, Wisconsin, each maple tree is individually selected and carefully tapped to obtain the quality sap needed for the best maple syrup. We do NOT use formaldehyde in our tapping process, as we try to keep this syrup as pure and natural as possible. We are state licensed and state certified.

Our pure and natural maple syrup is made from the sap of the sugar maple tree. Maple syrup production begins in early spring, typically in March, when warm days stimulate sugar maple trees to draw nutrient-rich sap upward. Raw sap is collected by boring a small hole in tree trunks and inserting a metal spout. As the sap moves upward, it falls drop by drop into waiting buckets. Sap is then collected and boiled to reduce its water content.       Approximately 40 gallons of sap must be evaporated to yield one gallon of pure maple syrup. To put that into perspective drop by drop, there are about 50 drops of sap in one tablespoon, 16 Tbsp. in one cup, and 16 cups in a gallon. 50X16X16X40=512,000 drops of sap to make a gallon of syrup.
